THE FARM

PARCO DEGLI ARANCI

The Parco degli Aranci organic farm was born from a love for our land, a passion for our work and above all a desire to take on a project to strengthen the relationship between agriculture and tourism. The driving idea is to cultivate and personally produce, as far as possible, the raw materials used in the creation of our dishes, from vegetables to seasonal and dried fruit.

As part of this, we decided to plant a small vegetable garden for our visitors because, in addition to the crops, we are also concerned with the little children who marvel, observe and ask questions and with those who are older but perhaps close to the earth for the first time and amazed at what nature offers.

The Parco degli Aranci organic farm was founded in 2017 after the olive trees dried up because of Xylella fastidiosa. The idea of regenerating of our land fascinated us, and we decided to explant the trees affected by the bacterium and plant new cultivars, including Leccino and Favolosa. The farm itself includes two main parcels of land: ‘Sirgole’ in the countryside of Cutrofiano and ‘Acriddi’ in the countryside of Sternatia, to which are added other fields scattered around Salento. The farm mainly produces extra virgin olive oil, pecan nuts and oranges. Extra virgin olive oil is obtained from high quality olives that are brought to the mill immediately after harvesting, carefully selected and processed within 12 hours.
Pecan nuts and organic oranges, harvested in winter, are selected according to size and either packaged or transformed into jams for our guests. We are also constantly looking for new people to get involved in creating something unique and going beyond the obvious aspect of agriculture—the production of raw materials—to regeneration, giving new life, teaching, healing, sharing, creating new relationships and evoking new feelings.
